Too many variables. There was a post awhile back that actually confirms Sturgian Druzhinik Champions are the best infantry in the game. All you have to do is dismount them lol. I really like using them dragoon style riding them behind the enemy dismounting them and sandwiching their line between 2 shield walls.

Khan's Guards are the best mounted archers, but aren't as good on foot as FCs. As for actual infantry, against infantry, legionnaires are the best. Against archers and cav, Sturgian heavy spearmen are the best.

Best defense against cavalry for myself is put archers on a hill. and shield wall of infantry at the slopes. After the initial main charge, perhaps second, have infantry break/charge. With my own cavalry i have them in reserve and don't engage until after the enemy cavalry hits my infantry on most occassions.
