Shields have a 'guard boost' stat which indicates how badly your stam will get wrecked when you block. The higher that stat the better. Early shields don't have much in that stat. About 20hrs in I got a tower shield finally which is much better in that regard. Smithing stone upgrades will improve this stat but VERY slowly, like +1 every 2 or 3 ...
