In some direct comparrisons on totk specifically i saw a few days ago, Yuzu has sharper shadows than Ryujinx, although Ryujinx has sharper textures than Yuzu. The performance side is a bit trickier because it depends your computer, but my advice would be try both Yuzu and Ryujinx and see which one performs better for you. In my case, it was Yuzu.
